Spaghetti squash - healthy, fast, and delicious!
It hit me last night - now that I've learned how to microwave spaghetti squash, cooking spaghetti squash is actually faster than cooking spaghetti noodles :o Add a jar of organic marinara sauce, can of sliced mushrooms, cheese, turkey meatballs, and a salad on the side - super easy, nutritious meal!
To microwave spaghetti squash, you'll first have to cut it in half (This is the hard part!). Once you split it, scrape the seeds out. Brush the inside surface with fat of choice (I prefer bacon grease!), and place both halves upside down in a microwave safe dish. Cover, and microwave for 8 minutes. Carefully remove cover and push down on the outside of the squash with your thumb (It will be hot!). If it dents, it's done! If not, put back in the microwave for 1-2 minutes and recheck. Let sit for a few minutes, and then scrape out the "spaghetti" with a fork. Top with sauce and toppings as you like, and enjoy! :)
