Cucumber Tomato Salad

My favorite dinner option for the 3 Day Refresh is the Cucumber and Tomato salad. So yummy! This would make a great side dish as well. 

2 tbsp. apple cider vinegar
2 tsp. balsamic vinegar
4 tsp. fresh lemon juice
2 tsp. olive oil (I used avocado oil!)
1 cucumber, halved & sliced
1 large tomatoes (can also use cherry tomatoes)
2 tbsp. chopped red onion
1-2 tbsp. fresh parsley, chopped
1-2 tbsp. fresh basil, chopped
dash of Himalayan salt or sea salt

Combine cucumber, tomato, onion, parsley, basil, and salt in a large bowl. Then in a separate small bowl combine vinegars, lemon juice, and olive oil for dressing. Drizzle dressing over cucumber/tomato mixture. Makes two servings!
