Clean eating eggplant parm!

Dinner tonight! ๐Ÿ†yum! Slice 1 eggplant into 1/4" slices. Place on baking sheet lined with foil, sprinkle with salt, broil for 5 minutes. Flip slices over and broil for another 5 minutes or until browned. Mix 1 can if tomato sauce with 1 teaspoon oregano, 1 teaspoon of basil, dash of garlic powder, and salt and pepper to taste. Line an 8x8 baking dish with foil, and layer some tomato sauce on the bottom. Add half the eggplant, sprinkle with 1/4 cup mozzarella cheese, add other half of eggplant, cover with remaining sauce and another 1/4 cup mozzarella cheese. Bake at 425 F for 25 min. Enjoy! ๐Ÿ˜‹
