So easy to make! Bake a sweet potato in the oven, or take a shortcut like I do and steam them for 15 minutes in the Instant Pot pressure cooker. Mix shredded cooked chicken breast (may use rotisserie leftovers or from a can!) and mix with Frank's Red Hot sauce, to taste. Heat up chicken if you're going to eat it right away, otherwise ok to use cold chicken if prepping future meals. Split sweet potatoes in half, top with shredded chicken (2/3 cup), and sprinkle with a bit of mozzarella cheese. I added a dash of ranch seasoning on top too. 😀 1 Red, 1 yellow, and 1 blue :)
