Gluten free peanut butter cookies today. 😍 Dangerously good! - 2/3 cup oatmeal (quick or old fashioned) - 1 teaspoon baking soda - 1/2 teaspoon cinnamon - 6 tablespoons coconut sugar (or light brown sugar) - 1 egg - 1 cup peanut butter Preheat oven to 350 F. I used a food processor with a dough blade, but this can also be mixed by hand. Mix the first three dry ingredients, and then stir in remaining ones. Form into small balls (about 1.5 tablespoons each), and squish down onto a cookie sheet. Bake for 10 minutes, and let cool on the cookie sheet for 10 minutes before transferring to a rack. #nomnomnom
